It’s a sheer howler to have food cooked in an unhealthy way. Steam or boil food instead of deep frying for long hours. Cook for little possible time to retain its nourishment. Add few spices and in little quantity. To soften hard veggies, pour as little water as possible to make sure the healthy nutrients don’t evaporate with the water.
